I thought it would be fun to share my weekly menus with you all! What better way than participating in OrgJunkie's Menu Planning Monday! My goal is to share healthy and inexpensive recipes with my readers. I do try to use whole ingredients a lot of the time, but as I have stated in the past, I am not always a stickler for keeping things completely "clean". Unfortunately, I rarely have exact measurements, but I will try to describe the "recipes" so that you can throw the meals together yourself if you want! :)
MONDAY: Jamaican Jerk Chicken Breasts on a huge romaine salad; baked potato on the side.
The original recipe can be found here. However, I substitute chicken breasts (skin on) for the thighs, and 1/4c of sugar free syrup for the sugar. I throw everything except the chicken breasts in the food processor since I hate chopping onions and spicy peppers. :) My husband loves chicken skin. I simply remove the skins on my serving after everything is grilled.
TUESDAY: Imitation Crab Burgers on whole wheat English muffin; salad
Crab "Burgers" (1 pkg imitation crabmeat, 1/4 c egg beaters; 1/2c breadcrumbs, your favorite seasoned salt (I am using Cajun seasoning), 3T olive oil mayo)
WEDNESDAY: Build your own Crockpot Pork Tacos on corn tortillas w/ plenty of fresh veggie toppings, jalepeno peppers, salsa, and hot sauce
Crockpot Pork Tacos (throw pork tenderloin in crockpot, add 1 pkt of taco seasoning or make your own blend (I use cumin, chili powder, cayenne, black pepper, garlic powder, onion powder... and I do not measure), cover with water, cook on low for the day. At dinner time, remove the cooked pork and shred with a fork. Serve meat, tortillas, and toppings buffet style!
THURSDAY: Subway 6 in. Turkey Sub on whole wheat
Drive to the nearest Subway and order. ;)
We will be heading to the airport on Thursday for a long weekend trip to the Hollywood, FL area! I can't wait!!! So, I get to cheat a little on my first Menu Planning Monday posting. Check out more menus at I'm an Organizing Junkie!

YAY! I love that your weight is down. I am happy but I am JEALOUS! My weight prob. went up (thougth I refuse to get on the scale) after a hellish bach weekend of booze and pasta. LMAO. or not. OY!

You know i'm partial to the "jamaican Jerk Chicken" cuase I'm Jamaica. But it never tastes as good as back home cooked on the barrel.
I can feast on that with veggies and be all set when i'm there...next month, next month...YEAH

I love Jamaica, although I have only been one time. This definitely does NOT taste the same, but I kept the original recipe name even though I swapped out an ingredient or two.

I like Subway but we have a locally owned sandwich shop I prefer. I go to Subway more when in a foreign town.
