ZOOOOOM!

This week has flown by! I'm tying up some loose ends here at work and getting ready to hit the road to meet Becca, Jes, and Tasha!! How excited am I?!! WEEEEee!! Comp? Pfffffft! It's girl time! I haven't had a girls weekend in... ever... seriously, maybe 10 years. LOL!

One day out and three pounds down from last show. I'm at 111.8. YIKES!

Wordless Wednesday - 1st Place Open Class C!


I'm Shrinking!!!

AHhhhhh! I woke up at a measley 114.6 this morning. The boss is trying to feed me back up, so we are not sticking to the original plan. Honestly, the little extra bit of food makes me nervous... but he knows his shit, so I shall follow along.

I'm SO EXCITED! I'm ready to go!! Prejudging starts at 11:00. Boy oh boy, and I looking forward to the food tomorrow... steak, white rice... YES!!

I know this is a ridiculously short and pointless post, but I just wanted to pop in and say hi!

Stiff!

Woo! I am stiff this morning. I decided to do stiff legged deadlifts for my last legs session on Monday. This chick is still feeling the stiffness -- I didn't even go hard or heavy. I hit some poses to send to my coach, and woah, it was tough. I have been having some issues with my back pose. I need to practice, but, hehe, I keep putting it aside. Oopsy. I hope it miraculously 'clicks' on stage.

And, I got a haircut last night. I am not picky. I just asked that it stay below the bra strap. Well, it's a good inch or so above... she easily removed over a foot of hair. My hair was down to my bum. Oh well. It's just hair. It'll grow out.

I guess I will pack tonight. I must make a list. Also, my room has no fridge or microwave... and it is $10 per day per appliance if I want it. I'm thinking I can go without. ALL of my perishables are frozen in a cooler in my freezer at the moment.

Food and makeup is packed, and that is the hard part. As long as I remember my tanner, heels, and suit, I can wing everything else, right? LOL. I'm working a full day Friday, hitting the gym, going home, then making the 3 hour trip. I wonder if I'm being a little too laid back about this process?

Oh, and I added more crystals to my arse this morning. No pic yet!

How Many Days Out?

Peak week, peak week! WOOO HOOO DAWGGY! (don't know how to spell that... )

I feel like I have a LOT to do. Today I finally got around to booking the hotel room. We aren't staying at the host hotel. I did not see the point when the host hotel was still 2 miles away from the venue. Also, I thought about how pooped I was after pre-judging last time... I mean POOPED... so I booked two nights on Hotwire for less than what I would have paid for one night at the host hotel. SCORE! Now I can nap before the night show. AND, I'm such a child, I want to go swimming when we get there Friday night. They have an indoor pool and hot tub that is open until midnight. I wonder how that would affect the tanner I put on Saturday?!

Tonight I will hit get a hair cut (y'all, I look like a bum. It's ratty!), hit some calves, make some muffins (maybe), packpackpack, I don't know what else. My brain, although mush, is going a mile a minute. Some moments I am completely docile and unenthusiastic about the weekend ahead... other times, like this very moment, my brain is going a mile a minute... and I'm NERVOUS at this very second, but this too shall pass.

Pumpkin Spice Meringues, Sweetened with Splenda

After battling a sweet tooth a couple weekends ago, I finally caved!! I attempted to whip up some sugar-free meringues. It was a success! I ate them pretty much straight out of the oven... all 48 cookies. I didn't even let them cool completely. It's just four egg whites, right? I can't wait to try these with other add ins, after the Fall competition season, of course!



Pumpkin Spice Meringues

4 Egg Whites (room temp)

1/4t cream of tartar

1c Splenda

1t vanilla extract

1T pumpkin pie spice

  1. Preheat oven to 300*
  2. Mix the egg whites and cream of tartar until stiff peaks form. This may take several minutes.
  3. SLOWLY pour in the Splenda and flavor add-ins. I added it in one tablespoon at a time. I was afraid that pouring it too quickly would deflate my peaks.
  4. Pipe or drop by spoonfuls onto a nonstick cookie sheet or pizza pan. I DID NOT SPRAY MY PAN.
  5. Bake for 25-35 minutes. They should be “hard” but not brown. If they brown a bit, they are still tasty, just not as pretty. You may then let them cool in a cracked open oven. I am not that patient. I let them cool on a wire rack (while eating them).

BWAH! I am running at about 80% today... I'll take it! WOOT! Energy is great (yesterday I was a lethargic piece of poo!), my throat still hurts a bit, and congestion is still slightly present... but whatevah! My cardizzle has been lacking, but today I managed to do slow jog + walk intervals. I felt like I climbed Mt. Everest... except I wasn't tired, hungry, delirious, or cold when I finished.

Just out of sheer boredom this morning, I took pics of my eats for the day. My carbs are low until Saturday, so that's why it's mainly veggies. I love my food, and here lately, I have been loving coconut oil more than usual. I need to use other fat sources, but this is oh-so-tasty! *smacks lips* nomnomnom.

Pre-Cardio Snack:
1/2 Slice Ezekiel, Coconut buttah oil


Post-Cardio Snacky-snack:
Egg whites
(I bake several batches of these at a time in mini-loaf pans, and they fit nicely in my Ziplock snack bags)

Meal 1:
Chicken, zucchini, yellow squash, and cucumbers topped with coconut oil and smoked sea salt.
Love the smoked sea salt and coconut oil combo! EFAs on the side (not pictured)


Meal 2:
Chicken, green beans, coconut oil, and smoked sea salt


Meal 3:
Tilapia and coconut oil under a mound of coleslaw mix, topped w/ sweet and tangy mustard.
The slaw mix was on closeout for $.50! I snagged up the last two bags. I've been eating it all week. Sick. Of. It.


Meal 4:
Chicken, green beans, coconut oil, and smoked sea salt. AGAIN!
I love it! With a side of creatine and glutamine (pre-workout)


Meal 5:
In the crockpot: Pork tenderloin topped with an array of spices...


with a side of asparagus drizzled with olive oil and topped with... you guessed it, smoked sea salt, and broiled until wilty and brown in spots... my favorite way to eat veggies! slightly charred!


Meal 6:
Protein shake w/ lots of ice and water! A side of fish oil caps (not ALL of these, sheesh!).


I have my trusty dijon and hot sauce on standby for all meals... except the protein shake -- that's just gross! ;)

I have been O. U. T. out! Sick as a dawg! The last few days I have been a bloated, tired, freezing, snotty, icky mess. I called in sick today, am feeling MUCH better, but still not near 100%. I sound like crap... talking is kinda fun, because I don't sound like myself. LOL!

The bloat that comes with sickness is the worst. I have been feeling so down about being ready. Thankfully, I woke up to a mini-drop. I'm still not at my lowest for this prep, but knowing that things are going back in the right direction really helps mentally.

TWO WEEKS OUT! Focus is incredibly high! I am hoping I can get down to 117 by week's end. That would be a perfect way to start PEAK WEEK! AHHHHH!

Wordless Wednesday - 3 Weeks Out Pic

SQUASH those cravings!

Fries?! FRIES?! We don't need no stinkin' fries!! :)

Here's one of my favorite eats at the moment!! Butternut squash fries!

1. Preheat oven -- I broil these bad boys on HIGH! Spray pan w/ non-stick cooking spray.

2. Peel then slice, dice, cut (which ever is your preference!) your squash.

3. Toss on the pan, arrange the pieces in one layer, and spray them with cooking spray.

4. Add your favorite seasonings -- these are good savory or sweet! My current favorite flavor combos are: smoked sea salt and freshly cracked black pepper OR smoked sea salt, chili powder, fresh black pepper, garlic

5. Stir'em around a bit to make sure that each piece gets its fair share of seasoning lovin'.

6. Put'em in the oven! I usually prep these first and let them broil while I finish preparing the rest of my meal. You can take them out every ten minutes or so and give them a gentle stir. I've let them cook any time between 15 minutes and 50 minutes... you just want to make sure the squash is tender. The browning preference is up to you -- I just go for convenience... when the rest of my meal is finished cooking the squash is, too. LOL!

And in the oven, along with acorn squash... I like to put my oven to work! LOL! I was prepping acorn squash for lunches later in the week.



And all done!! I enjoy these with 1-carb ketchup. Mmm, mmm, good!




What did I do with the acorn squash once it was tender?

I mushed it up with a fork, added seasoning, and threw it in a tupperware container for later in the week. I add the seasoning before I eat it, since I never know if I will be in the mood for savory or sweet! (HELLO SAIGON CINNAMON -- I heart you!)
