Fiberrific!

I have been wanting Pad Thai for a couple days now. Dinner last night did not hit the Thai spot. Today's attempt was decent. It all started innocent enough...


I thinly sliced a head of cabbage, rinsed a can of bean sprouts, and rummaged through the fridge to see what low cal options I could mix together. I pulled out a package of shirataki noodles, spicy mustard, and soy sauce. I threw 200g of cabbage, a can of rinsed and drained bean sprouts, and the package of noodles (rinsed and drained first).


While that was cooking down, I mixed up a sauce of spicy mustard, soy sauce, and stevia. It had a zing that would put hair on anyone's chest! Stirred that zingy-ness in, topped it with a tuna pouch and crushed peanuts, and lunch was served!

I started with just half of the veggie noodle concoction, but I ended up polishing off the whole pot!... all 17g of fiber worth. LOL!

Was it Pad Thai? Not even close! but it was good, totally diet-worthy, and since I will be venturing way outta town, halfway across the state to visit my dad, this leaves me plenty of wiggle room for RED LOBSTER tonight! I fully intend on indulging in a Cheddar Bay Biscuit.

Yum! Have fun! I have yet to try shiritaki noodles, which will have to be a time that hubby isn't home. He'll freak. lol Um, cabbage n bleu? What's that all about?
