Some like it hot!



PHEW! I drank about 64oz. of Kool-Aid (w/ Splenda) last night to wash down my meal. It was SPICY!
Who needs salad dressing when you have these two bad boys? I love them both! As you can see, I drowned my salad in it...

That's a blend of spring mix and baby spinach, topped with black bean & corn salsa, homemade mexi-hummus (as I so cleverly dubbed it! LOL!), red onions, chicken (of course!), pepperoncini peppers, jalepeno peppers, GARLIC HOT SAUCE, and HABENERO HOT SAUCE.

As mentioned in my previous post, I had this chocolate whey cake for dessert... slathered w/ Naturally More peanut butter! SCRUMPTIOUS!


My whey cake consisted of:

1sc BSN Lean Dessert Vanilla
2T unsweetened cocoa powder
1T unsweetened applesauce
1 egg white
3T Splenda
pinch of baking soda
pinch of xanthan gum

Mixed and nuked for 45 seconds!! The whey cake could be better... it was a bit dry, but it was still tasty and hit the spot!

We went to the SIL's house to watch the Cats play! GO CATS! My adorable two year old nephew kept saying "Neenee (Genie), go keee-eees (kitties, instead of cats!)"... Kids really do say the darndest things, huh? I made it home shortly after midnight... a few glasses sips of Moscato may have passed these lips. :)

On today's agenda...

Bright and early!! I woke up groggy and crampy and bloated and... you get the point. I made my way into the dungeon for my treadmill sesh. At least that is done.

My reward was this DELICIOUS and HUGE muffiny thing. When I took it out of the ramekin, it looked like a gigantic coffee shop sized muffin. I will be making more of these.


Mix:
1.5oz Gerber Squash baby food
95g liquid egg whites (not sure why I chose this number! whatever LOL)
35g oat bran
1/2T cinnamon
1/2T pumpkin pie spice
1/4c Splenda
1/4t vanilla extract
1/4t mapeline extract
1/4t butter extract
pinch of baking soda
pinch of xanthan gum

Bake in ramekin at 350 for 30 minutes.
Nutrition: 187 calories (3g fat, 26g carbs, 17g protein)

I'll probably have it again for breakfast tomorrow!!

The cabbage + chicken is in my belly already. :) I foresee a protein bar in my future, too!

Chug-a-Lug


Morning!!! (almost afternoon!!!) I have been a hangry chica today!! I'm sitting here chug-a-lugging on my H to the izzo (okay, that was lame), and chomping on my Cinnamint Orbit gum. nomnomnom.

I had another crazy day yesterday... I finally got settled down after 11PM *cries*.

Here's what we had for dinner...

ZATARAINS!


That's beans and rice, garlic chicken sausage (I chopped a couple up and left two whole), sliced mushrooms, some extra chicken broth... It was SALTY! I ate my tiny helping on a bed of baby spinach with cheddar rice shreds, red onions, and HOT SAUCE (not pictured).


I think almost everything tastes better in salad form... except cake... and cookies... and peanut butter.

After dinner, I tended to 4 pounds of chicken breast that were beginning to look a bit pale. Fired up the Foreman and drenched those puppies in my favorite BBQ seasoning. Then I let the seasoning burn... I think it tastes better that way. Hubby agrees! :D


Played with my new sharp shiny objects...

I must say, I surprisingly prefer the cute little orange Asian chopper that I used on my chicken two days ago... maybe I just like it because it's Asian, so I automatically felt a close bond with it... or maybe not.

This big ol' (new) knife got the job done, though! I think it will take a little while to get used to...


I wilted enough cabbage down for the rest of the week. Phew.

This morning I had a helluva time prying myself out of bed for a.m. cardio, but I did it... after chugging down my current pre-cardio concoction!


That's a mixture of Crystal Light and Kool-Aid (made w/ Splenda) in the back. I mix all the stuff together the night before so that the chunks of BCAA have time to dissolve... I don't want to drink it in this state:

After my super low intensity cardio sesh (upping the intensity is next week's goal!), I had a berry Amazing Grass + vanilla whey + coffee concoction... I added a bit of Splenda, too! It was actually quite tasty!

Brekkie numero dos was a baby food squash + oat bran + egg white + Splenda + cinnamon bun protein powder + mapeline extract + butter extract + vanilla extract + cinnamon + pumpkin pie spice PANCAKE! That's a lot of ingredients! It sure was tasty, though! I like putting the maple extract IN stuff.. it's like pancake syrup built right in! LOL!




I had this for breakfast #3. It was supposed to be lunch #1, but I was hangry.


Wilted cabbage + bbq grilled chicken + olive oil mayo! I don't know why I love this concoction as much as I do!

PHEW! Longest. Post. Ever.

Thanks for the feedback on the dress I posted yesterday! My coupon code did not work, so I'm not getting it. :( I can't justify spending $100 on a dress I will only wear one time. I would feel guilty... anyone else do that?

Feelin' Good!


I'm feelin' good for a change peeps! WOOTY WOO!!! I went to bed some time after 11PM last night (gotta get that under control), and I woke up bright-eyed and bushy-tailed ready to get my day started! Peed (I know you wanted to know that!), washed my face, brushed my teeth, then checked the clock... 1:30AM. FAIL! Hahahaa! Needless to say, I went back to bed... tossed and turned, dreaming of vampires at McDonald's and some other off the wall shit. LOL! Slept through the alarm, and woke up just in time for cardio. (Jenn, don't tell the world my dirty little secret. LMAO!)

My shoulder feels pretty good. The sickies are at bay... just some minor congestion, but I think that is residual junk just clearing out. I actually took yesterday completely off... again... and boy am I glad I did! I think forcing myself to workout previous days was doing more harm than good! I thought I was listening to my body by not pushing the workouts, and despite the workouts feeling physically draining, I mustered through. Bad move on my behalf! I need to be kinder to myself. I run myself ragged, so I am constantly getting sick. Sometimes I need to just BREATHE!

After cardio this morning, I drank a tasty little Amazing Grass coffee concoction.

Coffee, Amazing Grass Superfood in Chocolate Infusion, Cookies & Cream Body Fortress Whey Protein Powder, Ice, Stevia... blended to frothy perfection. nomnomnom

I'll be eatin' on some broccoli florets and tuna later on. YUM! I really need to pick up some salmon pouches and grapefruits. They have been missed!

Menu Planning Monday - 03.22.10


Heya peeps! I'm hopping back on the menu planning train!

Monday: Broiled pollock, red potatoes, broccoli (green beans for hubby)
Tuesday: Chicken, chipotle mashed potatoes (<-- from a box) (brown rice for me), green beans
Wednesday: Zataran's red beans and rice (just brown rice for me), garlic chicken sausage, broccoli
Thursday: Buffalo chicken tenders, oven baked fries, side salad
Friday: Pizza!!! I will have my favorite cauliflower crust pizza, while the hubs will get to enjoy a whole wheat crust!

In other news, I totally just came clean to my coach. *sigh* I guess that's just how I roll. Poor guy probably thinks I'm a nut case with all this falling-off-the-wagon-before-I-even-get-on-the-wagon type of behavior. LOL!

For breakfast this morning, I had a boring looking plate! It was delish, though!!


Three egg whites and one whole egg over easy, a slice of lightly toasted Ezekiel bread to sop of the yolk, and an apple for dessert! YUM! It actually tied me over to meal number two, too!


I shall dub thee Sludge Cake.

SLUDGE CAKE

1/2oz (1/2 scoop) protein powder (I used ATW Cupcake Batter)
25g (1 heaping Tbs) unsweetened applesauce
46g (3 Tbs) liquid egg whites (or 1 egg white)

Blend in Magic Bullet then cook like a pancake!


It was actually pretty darn tasty! See you after lunch! :)

I'M LATE!


OOF!!! I totally crashed and burned last night. I felt like I got hit by a MAC truck. I wish it were a M.A.C. cosmetics truck. The boys were hootin' and hollerin' watching the UK game (which you would have thought would have been a close game if you heard the raucous coming from the living room), while I took a hot Red Velvet Cake bubble bath. Afterwards, I laid in bed and Tweeted and caught up on e-mails from my iTouch.

This may be one of my least favorite Philosophy scents. I adore the other ones I have tried, but their chocolate scents do not do it for me.

Anyways, last night, I totally went to the gym. Seth was playing ball. I haste-fully waited until he was finished with his game, then told him I was not up to lifting. Walking up the steps was muy dificil. Seth cooked dinner... chicken fajitas! Except, he forgot the peppers and onions. LOL!! I heated up a microwavable pouch of Fiesta Rice and a pouch of Black Beans from the Old El Paso Heat & Serve line (LOVE!) and chowed down on a salad that was to die for!

That's shredded lettuce, black beans, fiesta rice, salsa, chicken, sautéed mushrooms, red onions, and light avocado ranch dressing with lime! Delish!

Fast forward to this morning...

I woke up hella late! People don't say hella any more, huh? This Kentucky girl is behind in the times. I had 30 minutes to prep my meals for the day, pack my gym clothes, pack my lunches, eat breakfast, and of course, get ready for work. Thankfully, I am feeling much more human today... more congested, but MUCH better.

I threw some Gerber squash baby food, oat bran, egg whites, cinnamon bun protein powder, and Saigon cinnamon into the Magic Bullet, and poured the batter into the omelet trays of my George Foreman grill.

One of the squash cakes ended up being miniature! I gobbled that one right up!

While that was cooking, I nuked a Bag-O-Beans (BOB? lol!) to pack up for two of today's work meals.


Once they were cooked, I tossed them in containers with last night's leftover chicken!


By then, my hot cakes were finished cooking, so I tossed them in a container (minus the reject mini-cake that I ate!), topped it with my homemade syrup (recipe will be in next post for easy access), and I plan on eating them pre-workout!


FINALLY, my meals were packed! PHEW!! Oh wait!! I only had THREE MINUTES to get out the door and I still hadn't eaten breakfast! I mixed some All the Whey Cupcake Batter with about 1-2 tablespoons of water and added it to my coffee (mixing it with water first prevents clumps when adding it to the HOT coffee). I also tossed in some Splenda and pumpkin pie spice. Take that Starbucks! NEENER! NEENER!



I also grabbed some Tamari almonds (YUM!) and an apple to round out the meal!



There you have it! Not too shabby for meal packing on the fly! Reason #139,081 why not having time is NOT a valid excuse! Now I just have to log all this stuff and see what I kind of macros I have left for tonight! :)

When oops = awesome!


MORNING PEEPS!! This morning was a struggle! I woke up congested, groggy, and my throat hurts like a mofo. I'm still thinking it's from sinus drainage. I love the warm weather, but man does it have me sneezing! and itching... you get the point. I woke up late, chugged down my coffee, and incline walked on the treadmill for thirty minutes, laptop in hand, planning my meals for the day.

My girl Jenn had a kitchen mishap the other day that ended up awesome. I had one during breakfast this morning. I had fully intended on having pancakes slathered in coconut oil and drenched in blueberry syrup. As my pancake was cooking, I went to the freezer to get my berries... but we were all out! So, in a brief moment of panic, I went to the cupboard and grabbed the first thing that wasn't too, too carby -- squash baby food! I mixed it in the pancake, and ended up with this:


Cinnamony Squash Oat Bran! My pancake base was simply egg whites and oat bran. I smooshed that all around with my pureed squash (which I like more than canned pumpkin! and baby food is cheaper and comes in individual portions!) and topped it with my beloved Saigon cinnamon, homemade sugar-free syrup (I will post this recipe later. I just need to find the exact measurements.), and some homemade all natural peanut butter. SO GOOD! I will be having this again soon!

I'm really excited about lunch. I made some chocolate Amazing Grass muffins for pre-workout fuel. I'll let ya know how they turn out! If they're good, I will definitely post the recipe! :)

Feelin' Fruity!



Hey peeps! Long time no see! LOL! Guess what I got? :-D A handy dandy new memory card, because my old one died on me. I think I had that bad boy for about ten years, so whatever. I got plenty of use out of it! Anyways... back to my NEW memory card. Have you heard of the Eye-Fi?! So far, it's been awesome! I take pics and magically wirelessly, it transmits the pics to my computer AND to my online photo-thingamabob of choice! Two words: BAD ASS! I love it!



Anyways, this new addition to my technological bag of goodies got me thinking... I LOVE food blogs. I love food. I love blogs. It's just a natural progression I suppose. SOOOoooo, do you see where this is going? Figure Competitor turns Food Blogger! LOL! I'm in prep so my meals may be boring.

HERE GOES!

Breakfast (all meals before noon!)

A delicious protein pancake!

  • All the Whey in Cinnamon Bun
  • A boatload of raisins
  • liquid egg whites
I topped it with a homemade sugar-free no calorie syrup and I Can't Believe It's Not Butter spray! Uhm, DELICIOUS!! Although, it's ugly. LOL!

This was loaded with raisiny goodness! I LOVE raisins!


The next thing in my belly was a pouch of salmon and a couple of grapefruits! Yes, a couple! I could eat them at every meal. Seriously, I have an addiction to these two things! I have both of them almost daily!


And, because I'm lazy, I will show you a little trick...

I cut a lot of stuff on parchment paper...


You see, this way I can just crumple up the paper, filled with the crap that needs discarded.

No mess! Although, all that paper might be bad for the environment. :-/ I guess it's a sacrifice I am willing to make at this point in my life. ;) Paper is biodegradable, right? LOL!

I also had several cups of Sumatra coffee... One of my favs!
